Savory Pot Roast With Gravy

This savory slow cooker Pot Roast came out amazing and it is so easy to make. My mother, my biggest critic, said it was the best Pot Roast she ever had! I have to say that I had a second helping and more the next day.

Savory Pot Roast with gravy
serves 4 -6

3 pound chuck roast

2 cans cream of mushroom soup

1 packet of dry onion soup mix

salt

pepper

garlic powder

In your slow cooker, mix the two cans of cream of mushroom soup and one envelop of dry onion soup mix. Season the chuck roast with salt (go easy since the soups have a lot of sodium in them already), pepper and garlic powder, and add to slow cooker.

Cook the pot roast on low for 9 – 10 hours, or 4-5 hours on high, until the meat is tender and falling apart. (I used high for 4 hours and it came out deliciously tender.)

Serve with mashed potatoes and side of veggies, or a crisp salad.

Chicken Marsala

This was the first time I made this in the CrockPot™ and I must say, I wasn’t disappointed. Lots of flavor and the chicken comes out so tender!!!

INGREDIENTS

2 cloves garlic, finely chopped
1 tablespoon vegetable oil
8 boneless skinless chicken breasts
1/2 teaspoon salt
1/2 teaspoon pepper
12 oz fresh sliced mushrooms or
2 jars (6 oz each) Green Giant™ sliced mushrooms, drained
1 cup sweet Marsala wine or Progresso™ chicken broth (from 32-oz carton)
1/2 cup water
1/4 cup cornstarch
3 tablespoons chopped fresh parsley (not shown in picture)

DIRECTIONS

Spray 4- to 5-quart slow cooker with cooking spray. In cooker, place garlic and oil. Sprinkle chicken with salt and pepper; place in cooker over garlic. Place mushrooms over chicken; pour wine over all. Cover; cook on Low heat setting 5 to 6 hours. Remove chicken from cooker; place on plate and cover to keep warm. In small bowl, mix water and cornstarch until smooth; stir into liquid in cooker. Increase heat setting to High; cover and cook about 10 minutes or until sauce is slightly thickened.Return chicken to cooker. Cover; cook on High heat setting 5 minutes longer or until chicken is hot. To serve, spoon mushroom mixture over chicken breasts; sprinkle with parsley.

Tortellini Soup

This Weight Watchers Friendly recipe came out amazing. Very hearty and full of flavor. I love how it looks as well, very colorful. I will be making this again!!

INGREDIENTS

8-10 oz. package Tortellini pasta-dried, frozen, or fresh
3 cups chicken broth
1 cup water
1-14 oz. can diced tomatoes
3 carrots, chopped
1 small onion, diced
2 stalks celery, diced
1 ½ cups fresh spinach, chopped
¼ cup Parmesan cheese
3 cloves garlic, crushed
1 tsp. Basil
1 tsp. Oregano
1 tsp. Rosemary
1/2 tsp. Black pepper

INSTRUCTIONS

Toss onions, carrots, celery, garlic, tomatoes, broth, water, oregano, basil, rosemary and black pepper into your crock pot. Cook on low 3-4 hours. Add tortellini, spinach and Parmesan cheese and cook on low another hour.

Corn Chowder

This simple recipe for corn chowder is perfect for a cold winter day. With a quick and easy preparation, it is Weight Watchers friendly and deliciously filling!

Serves: 6

INGREDIENTS
1 small onion (1/2 cup) diced
2 cups diced raw potatoes
1 teaspoon seasoned salt
1 teaspoon Worcestershire sauce
¼ teaspoon ground black pepper
1 cup water
2 cans (about 15 ounces each) cream style corn
¼ cup real bacon bits (optional)
1 can (12 ounces) evaporated fat free milk

INSTRUCTIONS
Ideal Slow Cooker Size: 3 to 4-Quart
Grease the inside of the slow cooker.
Combine all the ingredients except the evaporated milk in the slow cooker. Cover and cook on LOW for 4 to 6 hours, or until the potatoes and onions are tender.
Add the milk and stir well to combine. Cover and cook on HIGH for 1 hour, and then turn to WARM until ready to serve.

Sweet and Sour Kielbasa

This is a quick and delicious, easy Weight Watchers friendly meal for any night of the week. Just add a baked potato or rice (I used brown rice) and a vegetable of your choice for the sides.

INGREDIENTS
1 cup diced onion (1 medium)
14 ounces turkey kielbasa smoked sausage, cut into bite-size slices
½ cup ketchup
¼ cup brown sugar, packed
1 tablespoon mustard
1 tablespoon Worcestershire sauce (or to taste)

INSTRUCTIONS
Ideal Slow Cooker Size: 2 to 4-Quart
Microwave the onions in a bowl, stirring occasionally, until they are softened. Scrape them into the slow cooker. Add the kielbasa, ketchup, brown sugar, mustard and Worcestershire sauce and stir to combine.
Cover and cook on LOW until heated through and gently bubbly, 4 to 6 hours.

Cabbage Soup with Chicken Apple Sausage

This healthy soup is absolutely delicious! Being a weight watchers recipe, it is a very clean soup but filled with amazing flavor.

INGREDIENTS
6 ounces chicken sausage with apple, thinly sliced
1 onion, finely chopped
1 small head cabbage, shredded (8 cups)
2 medium potatoes, peeled and coarsely shredded
1 large carrot, coarsely shredded
3 garlic cloves, minced
8 cups chicken or vegetable broth
1 teaspoon dried thyme
1 bay leaf
1 tablespoon cider vinegar
Salt and freshly ground black pepper to taste

INSTRUCTIONS
In a 4 – 6 quart slow cooker combine the sausage, onion, cabbage, potato, carrot, garlic, broth, thyme, bay leaf, vinegar and salt and pepper.
Cover and cook on high for 4 to 6 hours or on low for 5 to 7 hours, until vegetables are tender.
Discard the bay leaf. Taste and adjust seasoniongs, adding more salt, pepper and/or vinegar as necessary.

BBQ RIBS

These are so tasty that I do this one all the time, they are THAT good. The meat falls off the bone as you take them out of the crock pot!

INGREDIENTS
4 pounds ribs of your choice
2 teaspoons Worcestershire sauce
1 teaspoon vinegar
Salt and pepper to taste
2 tablespoons brown sugar
1 teaspoon oregano

DIRECTIONS
In a bowl, mix together all the ingredients except for the ribs themselves.
Place ribs in slow cooker. Pour sauce over ribs and turn to coat.
Cover and cook on LOW 6-8 hours, or until ribs are tender.

Hearty Slow Cooker Beef Stew

This Hearty Slow Cooker Beef Stew came out amazing and it’s weight watchers friendly. This is one of the first meals I made for my new health regime and I have to say, healthy is tasting pretty good!

INGREDIENTS
2 pounds lean stew beef
1 teaspoon salt
½ teaspoon ground black pepper
¼ cup all-purpose flour
1-1/2 cups beef broth
½ cup tomato sauce (4 ounces canned)
4 medium red potatoes, cut in cubes
2 medium onions, sliced into wedges
1 cup baby carrots
2 cups frozen corn kernels
2 can (about 15 ounces) cut canned string beans, drained
4 cloves garlic, chopped
2 sprigs fresh thyme or 1 teaspoon dried thyme leaves, crushed
¼ cup chopped fresh parsley

DIRECTIONS
Ideal Slow Cooker: 6-Quart
Season the beef with salt and pepper, then toss with the flour to coat the meat.
Grease the crock pot with nonstick cooking spray.
Place the beef in the slow cooker.
Stir in the broth, tomato sauce, potatoes, carrots, corn, green beans, garlic and thyme.
Cover and cook on LOW for 7 to 9 hours, or until the beef and vegetables are fork-tender.
Stir in chopped fresh parsley.
Taste and add salt and pepper if necessary.

Rosemary Pot Roast

This Rosemary Pot Roast is so divine, your guests will be coming back for more!

INGREDIENTS
PAM® Original No-Stick Cooking Spray
2 pounds boneless beef chuck roast
or stew beef (I used stew beef)
3 small baking potatoes, cut into 1-1/2-inch pieces
1 large onion, cut into 1-1/2-inch pieces
1 can (14.5 oz each) Hunt’s® Diced Tomatoes with Rosemary & Oregano, undrained
1 can (10-3/4 oz each) condensed reduced fat and sodium cream of mushroom soup
1/2 cup water
2 tablespoons Hunt’s® Tomato Paste
2 teaspoons dried rosemary
1/2 teaspoon salt

DIRECTIONS
1. Spray inside of 4 to 5 quart slow cooker with cooking spray; set aside. Trim excess fat from beef; discard. Cut beef into 1-1/2-inch pieces; set aside.

2. Combine potatoes and onion in slow cooker. Top with beef and remaining ingredients. Cook on HIGH 5 hours or on LOW 10 hours or until beef is tender.
